dill potatoes

ingredients + prep

Ingredients:

-Any potato of choice, I used Idaho for this recipe 
-1/3 cup of chopped dill
-Half an onion
-1/4 tsp turmeric
-1/4 tsp cayenne pepper
-Pinch of pink Himalayan salt and black pepper 

Preparation:

Chopp up the potatoes about 1 inch x 3 cm, and cook in olive oil. When the potatoes are about 75% cooked add in the dill, onion, turmeric, cayenne, salt and pepper. Continue to cook until the potatoes are soft and until the onions are completely caramelized.

I like to serve these with a sauce:

-Equal parts of organic mayo and sour cream (as much as you'd like) I usually do 2 tbs of each, mixed in with black pepper.
