-2 eggs -1/4 of an onion -2 cloves diced garlic -1/4 tsp turmeric -Half of a tomato (diced)
Preparation:
Chop up onion, garlic, and cook in avocado oil with the diced tomatoes, until everything is caramelized. Season with turmeric, black pepper and garlic powder. Then crack in two eggs and run a fork through them to combine with the onion/garlic mix. Cook until eggs are done. I served mine on a bed of spinach, alongside- cilantro, dill, green onion, shredded carrots, cucumber, bell peppers, and broccoli sprouts. I dressed it with EVOO and balsamic vinegar.
